Wine Suggestions

I suggest an unoaked white wine with this menu. French would be a nice pairing, any white Burgundy; Chablis, Pouilly Fuissé, or Sancerre, which is primarily made with Sauvignon Blanc grapes. The trick is to find a wine within your price range that will complement the entree without overpowering it. Talk with the wine manager at your favorite wine store.

Dandelion Greens Salad

In the spring, my grandmother picked dandelions off our lawn before they flowered. She would sit on the cement bench in our backyard, cleaning them carefully, and rinse many times in a large bowl of fresh cold water. This was our evening salad, dressed with oil, vinegar, salt and pepper, and chopped hardboiled eggs. Note: Large dandelions are also available in our local grocery stores.

Ingredients

Dandelion Greens Salad
  • Large bunch of dandelions, or fresh from your lawn (enough for four servings)
  • 2 to 3 hard-boiled eggs, quartered
Wine Suggestions
  • ¼ cup red wine vinegar
  • 1 cup extra virgin olive oil
  • 1 clove garlic, finely minced (and optional herbs)
  • Salt and pepper to taste

Preparation

Dandelion Greens Salad

I like to double or triple this recipe and keep it in the refrigerator. It is more convenient to have on hand rather than prepare it each time I make a salad. It is also tastier than store-bought dressings. You can also take advantage of fresh herbs: mince a few (try tarragon, basil, or thyme) into the dressing.

Wine Suggestions

Combine ingredients in a small jar with a cover. Shake well. Chill 1 hour or more. Shake before serving.
