Ingredients
- ¾ cup sugar
- 2-3 teaspoons freshly ground cardamom
- 1 ½ tablespoons freshly grated orange rind
- 1 tablespoon orange oil
- 2 cups milk, lukewarm
- 2 ¼ teaspoons yeast
- 6 cups all-purpose flour
- 2 tablespoons unsalted butter, melted
- ¼ cup sugar
- ¼ cup light brown sugar
- 4 tablespoons golden flaxseed, ground
- ⅓ cup softened unsalted butter
- ⅔ cup Craisins
Preparation
For the Dough:
Combine sugar, cardamom, orange rind, orange oil and warm milk. Add yeast and 1 cup flour. Stir in remaining flour, alternating with melted butter.
Knead dough until smooth and shiny, about 10 minutes. Place in a lightly oiled bowl, cover with plastic wrap and let rise until doubled. Punch down and divide into two parts.
For the Filling:
In a small bowl, mix the two sugars and flaxseed.
Roll out each of the two pieces of dough into an 8x12-inch rectangle. With a spatula, spread 2-3 tablespoons of softened butter on each. Spread half of the sugar mixture and the Crasins on each.
Roll bread from long side (like a jelly roll) Place on baking sheet. Cut partially through the bread with scissors held perpendicular to the top into ½ -inch sections. Separate each section, pulling each alternately to the left and the right.
Loosely cover with a towel and let rise until double.
Preheat oven to 350 degrees.
Before baking, brush loaves with egg wash and sprinkle with remaining filling mix.
Bake for 20-22 minutes.
