Lobster BLT

Savoring food and drink from these festivals is an option anytime. Here are two ideas from Kathryn’s book, slightly adapted. The Hydrangea Buck was created in honor of July’s Hydrangea Festival. And who could resist an award-winning Lobster BLT?

Ingredients

SERVINGS: 8 Serving(s)
  • 1 cup guacamole
  • 1½ pounds fresh lobster meat, cooked and cut in small pieces
  • ¼ cup (or to taste) chipotle mayonnaise
  • 8 focaccia rolls, lightly grilled
  • 8 tomato slices
  • spring greens
  • 8 strips bacon, cooked to desired crispness
To make your own guacamole
  • 1 ripe avocado
  • 1 teaspooon each of finely chopped red onion, cilantro, jalapeno pepper
  • 1 teaspoon lime juice
  • ¼ teaspoon cumin

Preparation

In a shallow bowl mash the flesh of one ripe avocado. Add remaining ingredients and combine. Cover and refrigerate until ready to use.

In a medium bowl, combine lobster and chipotle mayonnaise. Spread guacamole on the grilled rolls and assemble other ingredients on top.
