Ingredients
- 2 cups long grain white rice
- 1 tablespoon olive oil
- ½ medium yellow onion, minced
- 1 tablespoon garlic, minced
- 4 cups chicken broth
- 1 tablespoon Greek Seasoning (recipe follows)
- 1 lemon, zest and juice
- 2 tablespoons fresh parsley or dill, minced
- 2 teaspoons dried basil
- 2 teaspoons garlic powder
- 2 teaspoons dried oregano
- 1 teaspoon black pepper
- 1 teaspoon black pepper
- 1 teaspoon dried dill
- 1 teaspoon dried marjoram
- 1 teaspoon dried parsley
- 1 teaspoon dried rosemary
- ½ teaspoon grated nutmeg
- ½ teaspoon dried thyme
- 1 teaspoon salt
Preparation
Toast rice in oil in a skillet with the onions and garlic until onions are translucent.
Add chicken broth and Greek seasoning. Bring the liquid to a boil, reduce to a simmer and cover. Cook the rice undisturbed for 15 minutes.
Turn off heat and let the rice sit for another 10 minutes.
When the rice is cooked, remove the lid and fluff with a fork.
Use micro plane grater to zest a lemon into the rice and then squeeze in lemon juice.
Stir in chopped parsley or dill and serve.
