Ingredients
- 1½ cups washed and chopped wild ramps
- 1 cup pickling liquid (from pickled green garlic recipe, below)
- ½ cup red wine vinegar
- 1 teaspoon red pepper flakes
- ½ cup grape seed or other neutral oil to emulsify
- ¾ cup pickled green garlic, recipe below (or ⅓ cup peeled fresh garlic)
Preparation
Blend ramps, pickling liquid, vinegar, and red pepper flakes in a food processor. Once blended, add oil slowly while running the machine to emulsify. Bring all ingredients to a boil and pour over chopped green garlic (or fresh) while still hot. Perfect served hot or cold with any beef or pork dish.
