Homemade Horseradish

Ingredients

  • 1 pound of cleaned, dried, peeled and chopped horseradish root
  • ½ cup white vinegar, more if you want a more spreadable consistency
  • ½ teaspoon salt

Preparation

Act as though you are Dustin Hoffman in the film Outbreak. Seriously. This is potent, volatile stuff. I wear rubber gloves and have a full-face respirator with chemical cartridges. If you do this on your back porch you don’t need that much protection but precautions should be taken. Set up your food processor or grinder and place a fan as close as is safe to blow the fumes away from you. Wear safety goggles and a cloth mask. Whatever you do, and trust me on this, absolutely resist the urge to put your nose in the food processor bowl and get a whiff of the root. Breathing will immediately become difficult.

Grind the root to the consistency you like, add vinegar and salt. Mix well.

Put in jars and follow the manufacturer’s instructions for handling and sealing the jars properly.
