Ingredients
Dandelion Greens Salad
- Large bunch of dandelions, or fresh from your lawn (enough for four servings)
- 2 to 3 hard-boiled eggs, quartered
Wine Suggestions
- ¼ cup red wine vinegar
- 1 cup extra virgin olive oil
- 1 clove garlic, finely minced (and optional herbs)
- Salt and pepper to taste

Dandelion Greens Salad
I like to double or triple this recipe and keep it in the refrigerator. It is more convenient to have on hand rather than prepare it each time I make a salad. It is also tastier than store-bought dressings. You can also take advantage of fresh herbs: mince a few (try tarragon, basil, or thyme) into the dressing.
Wine Suggestions
Combine ingredients in a small jar with a cover. Shake well. Chill 1 hour or more. Shake before serving.
