At The Chef’s Table

For chef /owner Mike Scarduzio of Fin in Dennis village, there’s a clear favorite when it comes to setting the menu while dining at home. For fiancé Kallie Maxim, the choice is always the clam pasta. Mike explains how it all started:

As a child growing up I always loved shell fishing for fun, and still do. There is no better feeling than digging for your own clams and then eating them after, fresh out of the ocean that day. My favorite ingredient to use while cooking is seafood, and I feel there’s no better place to get it than Cape Cod, which is one of the main reasons why I chose this location for my restaurant. There is also an abundance of wonderful seafood markets around here with large varieties of fresh options. Even though most of my professional culinary training is in French and Asian cuisine – that is what Fin’s cuisine is based on – both of my Italian parents are huge influences on my passion for cooking. So, when I’m at home, I’m making a lot of Italian-style dishes, and this is one of them.

What’s new for 2021 at Fin?

I feel this is going to be our best year yet! We have a wonderful staff that truly cares about Fin and giving our guests the best dining experience. We have some great new dishes on the menu and more in the works as the seasons and local ingredients change. And we have new creative cocktails and wines to pair, as well as a brand-new patio outside that is looking incredible. We also added more hives to our honeybee farm. Every time you see honey on our menu, whether it’s shaken into a cocktail or used in a dessert or appetizer, you are getting locally-raised and very fresh Fin honey. We are also growing our own vegetables again this year, such as tomatoes, that we can’t wait to share with you all!
