Bergamot-Infused Vodka

I was introduced to the actual bergamot fruit on a trip to Calabria, Italy. The fruit is a cross between an orange and a lemon. It is the scent in Earl Grey tea. If you cannot find bergamot, you may use an orange and a lemon.

  • One bottle (750 ml) 80-proof vodka
  • The peel (without the pith) of two bergamots (in season in January and February), or one orange and a lemon
  • ½ teaspoon superfine sugar

Slice the peel from the bergamots or orange and lemon, pith removed. Put the peel into the vodka bottle, add the sugar and shake well. Let the vodka infuse for 2 to 3 days or longer in the freezer. Serve in small, chilled glasses.
