
Michele’s Mediterranean-Style Chilled Conch Salad
Ingredients
- 1 tomato, diced
- 1 clove of garlic, diced
- ⅓ cup chopped parsley
- ½ red onion, diced
- ¼ tablespoon fresh oregano
- 15 capers, chopped finely
- juice of ½ lemon
- 3 tablespoons extra virgin olive oil
- 2 conch, sliced paper thin
Instructions
- Toss all ingredients except conch in a bowl, then add sliced conch and gently stir. Chill for one hour or more. Serve with grilled crusty French bread.
