Lemon Herbed Beurre Blanc

Lemon Herbed Beurre Blanc

Ingredients
  

  • 1 medium shallot, minced
  • 1 tablespoon of mixed herbs: thyme, tarragon, and marjoram
  • 1 cup white wine
  • 2 tablespoons fresh lemon juice
  • 8 tablespoons unsalted butter, cut into small chunks and softened
  • Salt and pepper to taste

Instructions
 

  • Combine shallots, wine, and lemon juice in a small saucepan. Boil, reducing mixture to ¼ cup. Remove from heat. Strain and cool. Whip liquid into the butter a bit at a time. Add salt and pepper to taste. Serve at once.
