Jason’s Wild Ramp Chimichurri

Jason's Wild Ramp Chimichurri

Ingredients
  

  • 1½ cups washed and chopped wild ramps
  • 1 cup pickling liquid (from pickled green garlic recipe, below)
  • ½ cup red wine vinegar
  • 1 teaspoon red pepper flakes
  • ½ cup grape seed or other neutral oil to emulsify
  • ¾ cup pickled green garlic, recipe below (or ⅓ cup peeled fresh garlic)

Instructions
 

  • Blend ramps, pickling liquid, vinegar, and red pepper flakes in a food processor. Once blended, add oil slowly while running the machine to emulsify. Bring all ingredients to a boil and pour over chopped green garlic (or fresh) while still hot. Perfect served hot or cold with any beef or pork dish.
