Farfalle Pasta, Heirloom Tomatoes and Brie

One of my go-to dishes in the summer months is this simple pasta dish. It is colorful, and the Brie melts into a delicious sauce, bringing all the flavors together.

Ingredients
  

  • 1 pound farfalle pasta
  • Variety of colorful heirloom tomatoes, grape or cherry, roughly cut
  • 3 tablespoons olive oil
  • 1 package of Brie cheese, cut into small pieces
  • 1 clove garlic, minced
  • ¼ cup torn basil
  • 3⁄4 cup chopped toasted walnuts
  • Salt and pepper to taste

Instructions
 

  • Boil the pasta according to the directions on the package. While pasta is cooking, mix the tomatoes, olive oil, garlic, and Brie in a bowl and set aside.
    Drain the pasta and pour into a warm bowl, then add the tomato mixture, basil, walnuts, salt, and pepper. Mix well and serve immediately on a large warm platter or directly from the bowl.
