Bergamot-Infused Vodka

Bergamot-Infused Vodka

I was introduced to the actual bergamot fruit on a trip to Calabria, Italy. The fruit is a cross between an orange and a lemon. It is the scent in Earl Grey tea. If you cannot find bergamot, you may use an orange and a lemon.

Ingredients
  

  • One bottle (750 ml) 80-proof vodka
  • The peel (without the pith) of two bergamots (in season in January and February), or one orange and a lemon
  • ½ teaspoon superfine sugar

Instructions
 

  • Slice the peel from the bergamots or orange and lemon, pith removed. Put the peel into the vodka bottle, add the sugar and shake well. Let the vodka infuse for 2 to 3 days or longer in the freezer. Serve in small, chilled glasses.
