Pea Pesto (Pesto Di Piselli)

Pe Pesto (Pesto Di Piselli)

Try this Pea Pesto made with fresh peas, parsley, cilantro, and mint for a unique appetizer on a toasted crostini or crackers. It is best enjoyed with a glass of white wine.

Ingredients
  

  • 1 cup fresh shelled peas
  • ½ cup good quality olive oil
  • 1 cup fresh parsley leaves
  • 1 cup cilantro leaves
  • ½ cup fresh mint leaves
  • 1 to 2 cloves minced garlic
  • 2 tablespoons toasted walnuts
  • 1 teaspoon of lemon juice
  • ¼ cup grated Parmigiano Reggiano cheese
  • 2 tablespoons butter softened to room temperature
  • Salt and pepper to taste

Notes

Add the peas to boiling salted water and cook for 2 minutes. Drain and rinse them under cold water or in an ice bath to cool.
Combine the peas with the remaining ingredients in a blender and pulse until smooth. Add more olive oil to achieve a smooth consistency.
Pour the pesto into a small bowl and beat in the cheese and softened butter by hand.
Salt and pepper to taste.
Yields about 1 cup.
