Cooking with Carafoli: Spring Greens

CELEBRATING THE FLAVORS AND TRADITIONS OF EARLY SPRING

In early spring, my connection to green vegetables and herbs feels deeply personal, filled with nostalgia. I am always drawn to the sight of fresh, young dandelions pushing up through the lawn or sprouting in the garden. Although many see them as mere weeds, these vibrant plants are, in fact, valuable herbs. Their arrival each year brings back vivid memories of spring’s arrival and my childhood spent in the small village of Sagamore.

There, it was an Italian tradition to gather and prepare these tender young greens for dinners. Even now, these moments continue to remind me of the changing seasons and my deep connection to family customs and my heritage.

The recipes that follow not only celebrate the greens themselves but also serve as reminders of the abundance of fresh foods available in our local environment. By focusing on what is growing nearby, I am continually drawn to the simple pleasures that come with preparing these fresh ingredients. It is through these experiences that I’ve come to appreciate how the act of harvesting and preparing what is close at hand connects us to our roots and the joys of our everyday surroundings. My garden green pea sprouts add brightness and vitality to salads, while oregano, parsley, rosemary, cilantro, mint and watercress become more than just toppings and garnishes – they are of the meal, bringing freshness and flavor to every dish.

These recipes are intentionally simple, letting each vegetable and herb shine. This way of cooking isn’t about elaborate techniques – it’s about honoring the character and essence of each green, allowing them to nourish in their purest form. Sharing these stories and traditions, passed down through generations, strengthens my connection to the season and the food that grows in our local surroundings, reminding me of the lasting impact of family, community and nature in our daily lives.
