There is nothing more critical than our health, and nothing scarcer than our time. That is the conundrum we face when it comes to dining options. With fewer people cooking, the microwave as the number one cooking device, and through our reliance on prepared food – often high in fat, salt, sugar, preservatives, and highly processed ingredients – we have slowly become one of the unhealthiest countries in the world. All of this has been made even worse by the rising cost of food, and the tremendous amount of food waste, some of which occurs when we don’t know what to do with “what’s left” after following a recipe.

But what if we could prioritize our health by cooking healthy, delicious meals more often, and save time and money in the long run by maximizing what we can make with the food we purchase? Here I will highlight a recipe from one of our local chefs; we’ll purchase what we need to create that dish, and then I’ll create an additional recipe you can make with the ingredients you have left!

Let me introduce you to Versel Johnson. He is a passionate and dedicated culinary professional who got his start in Provincetown at the Mayflower Cafe, where he worked his way up from a dishwasher to a line cook, discovering his love for cooking in the process. Over the years, he honed his craft working at many restaurants across the outer and lower Cape, including Fanizzi’s By the Sea in Provincetown and Brickhouse Restaurant in Eastham, ultimately landing the position of Executive Chef at Wild Goose Tavern in Chatham.

Today, he is the chef and co-owner, with his wife Lindsay, of 908 Bistro in Yarmouth. They opened in June of 2022 and have sought to make memories, one delicious meal at a time. As the parents of four young children (under the age of 10), they know that time and value matter, so they focus on dishes that represent their family recipes. For the following recipe, Versel strives to create a dish everyone, including devout carnivores, would love. “I wanted to make a cauliflower steak that I would enjoy,” he states. “This recipe will convert even the biggest meat lover into a cauliflower enthusiast. Juicy, flavorful, and packed with nutrients, this cauliflower steak will take your taste buds on a delicious journey.”

Jeni Wheeler is the Director, Co-Founder, and Creative Mind behind the Family Table Collaborative in South Yarmouth. She is passionate about providing nutritious, delicious meals to anyone who needs a “little extra love”, while working to improve the way society addresses nutritional security through innovation and creative partnerships that reduce waste and increase sustainability. Jeni has her MBA, with a focus in Social Entrepreneurship, from Babson College.
