Michele’s Mediterranean-Style Chilled Conch Salad

Ingredients

  • 1 tomato, diced
  • 1 clove of garlic, diced
  • ⅓ cup chopped parsley
  • ½ red onion, diced
  • ¼ tablespoon fresh oregano
  • 15 capers, chopped finely
  • juice of ½ lemon
  • 3 tablespoons extra virgin olive oil
  • 2 conch, sliced paper thin

Instructions

Toss all ingredients except conch in a bowl, then add sliced conch and gently stir. Chill for one hour or more.

Serve with grilled crusty French bread.
