The French Laundry. Chiltern Firehouse. Momofuku. Manresa. Molto Italiano. These cookbooks have inspired chefs to push the boundaries of what’s possible in the kitchen, crafting meals of unsurpassed creativity and flavor from the best seasonal ingredients. The inspiration for our third dinner in the series is the Momofuku Cookbookby David Chang.

Amuse Bouche: Chicharon with caviar

1st Course: Roasted Mushroom Salad with braised pistachios, pickled sunchokes and radishes

2nd Course: Halibut Sashimi with buttermilk, soy and poppy seeds

3rd Course: 3rd Course: Smoked Pork Belly with fuji apple salad, kimchi and maple labne

4th Course: Cape Cod Scallops with kohlrabi puree, iwanori, pickled mushrooms

4th Course: Cape Cod Scallops with kohlrabi puree, iwanori, pickled mushrooms

5th Course: Cereal Milk Bar with avocado puree, chocolate hazelnut, caramelized cornflakes

All courses accompanied by a select wine pairing
